Simplifying the process further

 

The previous process is good and all, but I think it's too complicated, it felt like it was born from not trusting my rendering skills too much. I went with all white here to have better clarity in my Ambient occlusion, using 90% grey pressure opacity soft brush to shade. The general idea in making ambient occlusion is that the more geometry there is, the darker it gets. It may not look like much now, but when combined with shadows, it will produce great results. If I want to darken it anyway, I could change the AO colour and double it up.
